The cold winter not only brings cool breeze but also a temptation to eat something hot , light and healthy . And today in this blog I will share with you a perfect winter meal Indo-chinese Veg homemade Manchow soup .

What is Manchow soup ?

A treat to your taste buds is how I would describe Veg Manchow soup . A thick broth of spicy soup with whole alot of different stir fried veggies , topped with fried noodles is a delight full starter for indo-chinese feast .


This is also a very easy recipe , requiring only 15 minutes of your time . That means it is also suitable for bachleors living alone , mothers who have young children or a corporate job employee . It is a for everyone recipe .


You can customize this soup recipe as you want . Add vegetables according to your prefrences and liking , add things , opt things out don`t shy away from adding stuffs . In this recipe I didn`t add fried noodles to keep it healthy but if you want to give it a more restaurant like feel you can add them .


So now you have a brief idea about what is Manchow soup let`s how we can make it at home . Let`s hit the kitchen.


How to prepare Veg Manchow Soup


Ingredients required for Veg manchow soup :

Vegetables

Ginger-garlic paste

Oil

Iron pan/kadhai or a regular pan/pot

Dark soya sauce

Red chilly sauce

Tomato sauce

Schezwan chutney

Black pepper powder

Salt

chilli flakes (optional)


Vegetables required

1/2 cup capsicum

1/2 cup carrot

1/3 cup beans or 3 strands of beans

1/2 cup onion

1 cup cabbage

1/3 cup spring onion

2 green chillies (add according to your spice level)

Finely chop all the veggies like shown in the picture below :


Pro tip : Since in veg manchow soup you require small veggies it can be time consuming and also very tiring . So you can use a vegetable chopper it will make your task easy and less tiring .

But if you find joy in chopping vegetables than you are good to go!


2) In a hot iron pan (I am using a iron pot/khadhai for the recipe . You can use a regular pan also) add 2 tablespoon of oil . Heat the oil and add ginger-garlic paste and green chillies .

You can use the market ginger-garlic paste or in a mortar-pestle add garlic cloves and ginger along with little bit of water and crush them . You will get homemade ginger-garlic paste.

3) After frying the ginger-garlic paste add chopped onions and don't over cook the onion . Cook until they turn pink .



Chopped onions and green chilies sauté in a large, round metal pan.


4) Now add all of your veggies capsicum , carrot , cabbage , beans and fry them but don't overcook them .


Chopped vegetables like carrots, peas, and onions are being stir-fried in a metal wok with spoon mixing it.

5) Add 1 tablespoon dark soya sauce , red chilli sauce , tomato sauce , Schezwan chutney and chilli flakes .

6) Add salt and don't dont go crazy with it as dark soya sauce also have salt .


7) After adding all the ingredients add about 1 litre of water or you can also add vegetable stock.


A metal pan holds bubbling soup with chopped vegetables and spices.

8)Take 3 table spoon of corn flour in a bowl and add 2 tablespoon of water . mix well and make sure there are no lumps .

9) Now take this corn flour slurry and slowly add this into the our soup.


Pro tip: 1)while add the corn flour slurry make sure to keep stirring so that lumps are not formed .

2) You can add more corn flour slurry if you want to make the soup thick.


Spoon and a bowl containing white coloured corn flour slurry.

10) Keep the flame on medium high and let the soup boil for about 10-15 minutes.

Top it with spring onions or fried noodles.





FAQs


Can I add mushrooms ?

You can add any preferred vegetables that you like . Since I didn't had mushrooms available I skiped them .


Can I skip the tomato sauce?

Yes you can skip tomato sauce if you don't like it.

Adding veggies

remember to not overcook the veggies as we need them to be crunchy.

Add corn flour slurry

You can adjust the amount to corn flour according to the thickness you want . while adding the cornflour slurry don`t add all at once keep , add a little and mix and repeat the same .

You can add fried noodles if you want to .

Pour hot oil to a iron pan . Heat the oil . When the oil turns hot add finely chopped ginger , garlic and green chillies .

Saute for 30 seconds and add onions . fry onion till it turns pink . Don`t overcook .

After you saute the onion add all veggies cabbage , carrot , beans and capsicum . Cook them for 1-2 minutes .

After cooking your veggies add dark soya sauce , red chilly sauce , tomato sauce , black pepper , salt and schezwan sauce.

Add about 1 litre water . After first boil add corn flour slurry and keep on mixing .

let it boil for 5 minutes and check if the soup have thickened .

Add coriander leaves on the top and turn off the flame and serve .
